strawberries & cream cookies  
this one's for vanessafrida :)

some time last month, i decided to bake cookies for my galpal val, for her birthday. have been wanting to try this recipe for the longest time, and even have the dried strawberries ready in the pantry. hid them from the eyes of the hungry brother who has been eating everything in sight.

this was the original recipe:

1¾ dl sugar
225 g unsalted butter
¼ teaspoon salt
4¾ dl flour
2 tablespoons whipping cream
1 teaspoon pure vanilla extract
1¼ dl minced white chocolate
1¾ dl dried strawberries, coarsely minced

Preheat the oven to 165°C (325°F)

In a food processor, whiz the sugar to finely pulverise (not sure if this is
necessary, why not just use powder sugar instead?)

Mix sugar with the butter. Mix on slow speed until well blended and then add
in the flour and salt and blend. When almost blended into a dough, fold in
the vanilla, the cream, the white chocolate and strawberries and mix by hand
to incorporate the strawberries and chocolate without them blending right
into the dough (otherwise the berries will discolor the dough).

Knead on a lightly floured work surface about 1 minute, to make dough very
firm. Flatten the dough in a disc, wrap well and refrigerate 30 minutes.
Roll out gently and cut into small round cookies about 1/2 thick. (What I
did was roll the dough into two thick rolls and cut the cookies straight
from that after refridgeration)

Place on prepared cookie sheet. Bake, immediately reducing temperature to
150°C (300°F) until lightly browned, about 40-50 minutes. (I'm not sure
about this time, I didn't bake mine nearly as long, but I have a feeling the
oven might have been too hot to start with, so just keep an eye on the
cookies while they bake)


i converted the measurements loosely to:

3/4 cup sugar
225g unsalted butter
1/4 tsp salt
1.9 cup flour
2 tbsp whipping cream
1 tsp vanilla extract
less than 1/2 cup minced white chocolate
3/4 cup dried strawberries, coarsely minced

i also skipped the part about powdering the sugar, and used normal raw sugar instead.

somehow, my dough turned out very much wetter than i expected from the recipe, so instead of kneading it, flouring it and cutting it after chilling, i popped the whole blob into the fridge for about half an hour, got it out, scooped out little blobs with a teaspoon and whacked them into the oven.

didn't know if it would be a disaster. :) but they turned out beautifully.

mother reckons they're better than the [cranberry oatmeal cookies] that everyone loves. i don't know, i think it's a close fight. very very happy with how these turned out.

birthday girl munched them up in a jiffy too. teehee.

i wonder if there will come a day when smells can be captured electronically as a file like audio! that would be awesome. :)

ps. i'm thinking of upgrading to macbook from my ibook!

Dried strawberries
Hi! I happened to surf by and was attracted to your recipe! I could almost taste the cookies as I was reading your post : )

I'd like to try the recipe out...but how and where can I get dried strawberries? Fresh ones don't work, I suppose?

are you in singapore? i got mine from the dried tidbits/fruit stall in the takashimaya basement. i've also seen it in raffles city, the little sweet shoppe next to the atms in the basement. :)

ps. i only baked them for about 12 minutes each tray if i remember correctly. and i also popped in one teaspoon of baking powder!

pps. i didn't reduce the oven temperature though, i just kept it at about 160 degrees throughout!
