my mother loved the mini muffins so much (even though they turned out more like cakes than muffins, compared to the standard sized ones) that she requested for 30 to bring to the choir old fogies today.
so last night, i whipped up another batch of strawberries & cream mini muffins. i made some adjustments to the recipe just to see how it would turn out:
1/2 cup sugar instead of 3/4 cup.
1 cup white chocolate chips instead of 1/2 cup.
2 cups flour instead of 1 1/2 cups.
1 cup milk instead of cream + milk (because we ran out of cream)
skipped the oatmeal to see if it was making the batter heavy.
180 degrees Celsius instead of 200 degree Celsius.
and stuck to the rest of the recipe.
quite pleased with how they turned out. :) definitely fluffier and prettier. mother was satisfied. mini muffins are on their way to be consumed as we speak.
i think i will still add rolled oats the next time though, i kinda like the nice crunchy bits in the first batch.
